I kind of resent the fact that Instagram and Tik Tok have made oatmeal become a basic thing to like. Oatmeal used to be hated by the food community five to ten years ago–it was deemed as bland and slimy. But the foodie community has made it trendy by adding some decor on top.
Oatmeal has long been a staple in many families, but when you think of plain boring oatmeal, it makes sense that people lose the appeal for it early into childhood. The new and trendy oatmeal you see flashed on aesthetic instagram posts bear no resemblences to the microwave flavorless oatmeal you grew up eating.
Adding fruity flavors is a great way to spice up your oatmeal, and let me tell you, lemon blueberry is the way to go. The tartness of the lemon, the sweetness from the blueberry! YUM! Give this a try and you’ll see what I mean. 😉
Here’s what you’ll need…
Lemon juice (fresh lemons are always better.)
Banana (for sweetness)
Lemon Blueberry OatmealCourse: BreakfastDifficulty: Easy
1 cup of rolled oats
1/8 cup of lemon juice (two squeezed lemons)
1/2 cup of blueberries
2 cups of almond milk
- Add all ingredients to a pot (mash the banana first) and put on medium-high heat, stirring every few minutes.
- Serve with your choice of toppings! I used almond butter, banana, berries, and hemp hearts!
